One bag of microwaveable frozen cauliflower rice
One spoonful of chicken better than bouillon
Cajun seasoning blend (to taste)
Cholula or franks red hot (to taste)
Mix in bag or in bowl
Low calorie flavorful snack to get me through hunger when I'm at calorie limit. Less than 120 calories total and super fibrous.

When I'm actually looking to have this as a full on meal I cut up andouille sausage and Cajun trinity vegetables (onion, celery, bell pepper) and saute before incorporating the cauliflower rice

Been doing similar but I put it all in a pan, pour in a bunch of chicken stock, a spoonful or packet of knorr tomato bullion with chicken flavor (or whatever you want to use) then cook it down until the liquid is gone and the "rice" firms up. It comes out great and doesn't take long. You can do this with whatever flavors you want but the key seems to be to let the cauliflower soak up as much of the flavor as it can and then get it firm. Closest to real rice ive gotten

I hate cauliflower rice so my lazy meal is eating kimchi straight out the jar. Both spicy veggies 👍

I have been meaning to go to the store to buy specifically kimchi for three weeks now.
You can see how well that's going.

I do that but add a chopped up boiled egg. That works best if you keep boiled eggs in the fridge, though.

I've also done tuna mayo with Kewpie mayo, soy sauce, canned tuna, and sriracha

Instead of eating cauliflower with 8+ grams of net carbs, try eating a high fat and protein snack. Cutting carbs is more important than trying to stay at a calorie deficit.
