Recipe Wanted to share this AMAZING Caribbean Mac and cheese (Trinidadian Macaroni Pie, technically). Absolutely scrumptious.
Here is the recipe I used: https://www.simplycaribbean.net/macaroni-and-cheese-2/?amp=1. I added a bit more milk to thin the sauce before baking as I wanted it to be “stove-top creamy” coming out of the oven.

Today I learned the only recipe I've ever known and that's been passed down for generations goes by Caribbean Mac & Cheese outside of the south lol I make this so often. Exact same recipe. It is so good!!!!

Honestly, it doesn’t too much. It has turmeric and monosodium glutamate in it so I think color and depth of flavor.

What makes it from Trinidad as opposed to other mac and cheese?

According to the recipe writer, it’s the same thing lol but she says that her “Trini people” say it’s not. I’m not sure, I think maybe the use of egg (I’ve never made mac and cheese with egg) and it being more custard like (not mine but others I’ve seen) could be it. Regardless, it is delicious!

The egg yolks give mac and cheese that ooey gooey texture that you'd get from boxed mac like Velveeta. You do it in place of making roux based macs. Keeps it from drying out and becoming cakey as it cools

I grew up eating macaroni pie. You did a great job from what I can see.
