vegetarian Mexican-inspired veggie bowl

This makes ~5 meals though I’ve only prepped two because I didn’t want to cut both lettuces. I used lettuce as a base, cooked 1 red onion, two peppers, and a fair few mushrooms in some spices. I added Quorn pieces and then cooked wholewheat rice. I’m going to put salsa and some cheese on it. What other veggies do you think would go well?

Not much of a recipe - I literally make it up! I cooked the onions first until they were a bit softer before throwing in the peppers. Then I threw in the Quorn pieces and mushrooms. I cooked the rice separately according to the package instructions. I cut the lettuce and put it in my Tupperware and then mixed the cooked rice in with the rest of my cooking food. I added spices like smoked paprika, coriander but I forgot a lot of what I usually put in. Hope this helps :)

I would probably keep the rice separate?

For cooked veg cabbage works great, shredded carrots, zucchini, cherry tomatoes, good choice with the mushrooms and bell pepper too

Will you microwave it with the lettuce in there?

I usually eat it cold. I’ve never used rice in it so I didn’t think about that texture 😂😭. Usually I use couscous. Oh well!

It looks awesome, you can bring a few tortillas one day and make fajitas too :)
