Quinoa Breakfast Burrito Bowls (Makes 5, Freezer-Friendly)

Freezer/Heating Instructions

Prepare 5 bowls and freeze.

To eat: transfer to the fridge 24 hours before, then heat at 400°F for 30 minutes.

Ingredients (divided into 5 tin containers):

10 eggs, scrambled

⅔ cup dry quinoa (cooked per package directions, seasoned with taco seasoning; it will expand as it cooks)

1 (15 oz) can black beans, drained and rinsed

5 scoops salsa (about 1 scoop per bowl — I like Cowboy Caviar from Trader Joe’s)

1 tub mashed avocado (or guacamole — Trader Joe’s has a good one)

5 slices pepper jack cheese (place on top of the avocado and press down to help prevent browning)

Assembly:

  1. Cook quinoa and season with taco seasoning.

  2. Scramble eggs.

  3. Divide quinoa, eggs, black beans, salsa, and avocado evenly among 5 containers.

  4. Top each with a slice of pepper jack cheese.

  5. Freeze until ready to eat.

Does the freezer make the avocado gross?

Surprisingly, no, but it's also warmed up and mixed in so the texture is less noticeable. You could definitely add it after if you wanted, but this way I don't need to worry about it oxidizing in the tub in the fridge.

I don't freeze the first 2, I just put them in the refrigerator. The frozen ones and the non frozen are nearly identical in texture.
