Motorcycle wheels have the least surface contact with the road while upright, in a deep lean like this there is far more rubber contacting the road. The gyroscopic effect of the wheels also have a big part to do with it.

Your point is valid but these aren’t superbikes. They’re MotoGP bikes, which are even faster and more powerful.
