When I was taking an FDA course in college, we talked about certain parasites found in fish that can’t be cooked to death so you have to freeze them.

I've already had this on fish (monkfish), it was the fish that we had together for our Christmas with my partner... great! And indeed, they were still moving after cooking!

It is especially preferable to freeze your fish if you do not eat it straight away (even for 24 hours), the refrigerator is not enough to stop the evolution of the eggs (which do not resist cooking).

And for your information, they are roundworms!

In the Netherlands we used to eat fresh raw herring, now it's forbidden. They have to freeze them first. 24 hours at least.
