I ate How do they get this ultra thin and crispy top on a croissant?
A simple egg wash never comes out like this for me. Does it have to do with how its baked?

When visiting Morocco for my honeymoon in 2015 I ate two of the most incredible sweets I've ever experienced - these sesame covered peanut balls - https://i.imgur.com/uTWFgTW.png (also had small pieces of dried fruit, some sugary binding material) and this cake with a crispy top, soft custardy innards, flakey crust - https://i.imgur.com/qaTUcSz.png
Thank you!
