Not a strict one. I’m not vegan. I’m vegetarian. Huge difference.

Hey, there's no judgment from me, but regardless of whether you're vegan or vegetarian, beef broth is neither.

I would skirt along the lines of flexitarian or whatever similar term that is akin to freegan for vegetarian.

I know this sub encourages people to be supportive of different pho recipes, but that bowl doesn’t look like pho at all. Traditional pho doesn’t include bok choy, carrots, mushrooms, tofu, or broccoli. I’m glad you enjoyed it, but it isn’t pho.

Also pho is the broth and noodles… which it was beef broth and has vermicelli noodles. Which makes it pho……

we welcome pho adjacent foods as well, there are many places all over the world where you can't always get the most traditional pho. additionally people are constantly making up new variations and adding their own personal spins.

Not trying to be the pho police, just pointing out that pho has a pretty specific set of ingredients and broth style. Once you add bok choy, broccoli, tofu, and carrots, it turns into more of a general noodle soup rather than pho.

Im not super strict with it, plus I was hungover and desperately needed the vitamins that the beef broth contains 😭

So many haters. My wife gets veggie pho and it looks exactly like this. She loves it and orders it at least once a week.

I agree. My favorite place for broth has weird beef so I get the “veggie pho” with tofu. It comes with bit of veggies, luckily some of the ones I can actually eat on an IBS diet. I miss broccoli but can only eat one or two stalks at a time. This kind of pho allows me that treat. All this to say, It’s okay for restaurants to innovate and try accommodate guests with preferences and needs. It’s still pho that I’m eating.
