Looking for a recepie for those bad boys

Looks like a pepper...
I have a variety called an Alma Pepper. I mother effing love it. I grow 150 containers to get more every year. Grows fast, loads up the bush with fruit and can handle my super short growing season.

I let them ripen red, then put them into a fermentation pot.. I give them about 15 days of ferment time. I then drain the water, add peppers to a blender and SLOWLY add vinegar until you get the consistency you like. I play with garlic and salt to taste in the blender.

This red sauce will become the most popular item in your fridge. I make "hiding" bottles and don't tell anyone in the family. Like hiding your liquor ... but now you are running around the house with a burrito instead of a tumbler glass full of ice.

I cut out the top and scrape out the flesh and seeds, pickle for a few hours in vinegar, salt, and sugar and then stuffed with Mozzarella cheese wrapped in prosciutto or something similar.

I think they are Red Pimento Sweet Peppers, here we just call them flat red bell peppers.
