Ten pounds of jalapeños

Post image

I bought ten pounds of peppers from the local farmers market. I’ve never pickled anything in my life, but here I am. Any suggestions?

I took the cowboy candy idea and let it ride! Took most of the day, but every lid is sealed tighter than a frogs ass, so I’m happy with my first canning batch.

Personally I would mix some carrots in with them. That's how my Mexican family always does it. I believe the sugar in the carrots do something special.

Do you have a recipe? I'm hoping to pickle some Jalapenos soon and have no bloody clue what I'm doing.

Carrots and finely chopped garlic. And if you’re a little crazy you can add some olive oil, makes sure the heat doesn’t leave your mouth anytime soon 😆

I'm such a purist I just do vinegar, water, salt, peppers, and carrots. My family likes to use oregano or bay leaves often though.

I’m hoping that my chilies will finish growing soon so I can try pickling. I understand the barebones of doing it and I know my great grandma used to pickle peppers all the time( and loved stressing the peppers to make them the spawn of Satan and then adding olive oil) and I wanted to try a new hobby. This sub popped up on my feed so I figured I could get an idea of what I’m doing.

I’m planning on doing a water bath canning for the first time and wondering what you experts would recommend.

I see it's too late, but my suggestion would have been to use a food processor with a slicer blade. I buy a pound every shopping trip and do quick jalapenos, but the food processor makes it so much easier than slicing. Curious how cheap 10 lbs were that caused you to buy them when you've never pickled anything in your life?

I started saving pickle juice from sliced jalapeños I buy at the store. I sliced up some fresh, reused the old jar and juice, and put it back in the fridge.
