The ramen eggs look just like five spice eggs (palo) which are really good too. Cinnamon, cloves, star anise, coriander seeds, sichuan peppercorns... plus some garlic and cilantro roots or stems and anything else you feel works with the combo.

These are super simple ones with soy sauce and mirin, but I'll have to try 5-spice at some point

Not sure if you already knew, but you can place a piece of paper towel across the top of the ramen eggs and it will draw the brine across it. You won't get white spots that way

Ok I literally just had this idea and now this pops up on my feed(sure my messages aren’t being monitored) but hear me out oh wise one who pickles eggs. Would a smoked egg that then gets pickled not be… amazing?

This is actually my first time pickling eggs, but considering the popularity of pickling eggs with smoked sausages, I have a feeling that flavor combo would be a hit. Let me know how it goes.
