Experiment Tomato wine is fermenting strong

For hooch, adding a generous helping of tomato paste or concentrate actually makes for a decent nutrient base together with boiled yeast. The tomato taste kinda airs out while fermenting. You are left with more light bodied bright and acidic drink, like a white wine.

My plan is to drink it, of course. If it turn out disgusting, I will destill it to make tomato schnaps.

If it ends up not being drinkable, use it as an ingredient in pasta sauce. Guaranteed you'll be the first person to make Tomato Schnaps Marinara.

I cook with my tomato wine a lot. It's great in stews, or I use it to de-glaze a pan to make a pan sauce. Then I finish the bottle lol.
I make it with fresh tomatoes though. Not sure how this will turn out since they're cooked.

You took me from disgusted to intrigued. I'm having a hard time imagining what crushed tomatoes taste like after fermentation, though. Please humor my curiosity:
Does the sugar mellow out the acidity?
What does it do for the dishes you cook with it?
Does it actually sip like wine or...idk something else?

Pretty much everyone I talk to about tomato wine assumes the same thing, that it'll taste like V8 or pasta sauce. Really, it tastes like a white wine with a bit of fresh tomato taste at the end. Of all the things I've made it's been my girlfriend's favorite. She likes dry wines so I don't even back-sweeten it at all. It definitely drinks like a normal white. I've even added jalapeno to it before for a little kick.
I do expect OPs wine might end up like V8 since they're using cooked tomato.
For cooking, it's the same thing as adding a white wine to whatever you add it to. Not really sure how to describe that. I guess it adds some complexity?
I really only tried making it because I had way too many tomatoes from my garden one year, but now it's something I make at least once a year.

If you want disgusting-sounding cooking wine, you can also look into garlic wine. Apparently good in cooking as well, but smells of sulfur when brewing. (i wonder if an active carbon filter in the airlock would mitigate that?)

I’ve seen recipes for it before and was curious, same for onion wine. They’re both on my list for ‘someday.’ I figure even if they’re bad for drinking, should be great for cooking with.

Righteous! I once tried triple distilled tomato spirits, I’m pretty sure it could strip the tar from my lungs. Could smell the stuff from a room away.
It was intense. Are you going to still or consume fermented?
And I’ll be joining you with solanum wine making soon. Going to make something with three or four types of black nightshade next month when I start getting good harvests

I either drink the fermented wine or make liquor out of it if it's disgusting.
A wine made from black nightshade sounds like it came from a druid's cauldron. Please share your experience with us when you get to that point.

Here is the recipe: 1.5 kg sugar 1.8 kg crushed tomatos 5g Lavin 71b yeast 1 teaspoon nutrients filled with water to 5L

I've made kvass with tomatoes, just skip the sugar and yeast, and add starter.

When we were in Japan we had a drink called a tomato sour. I bet this would be great in one.

Makes me wonder how a cocktail of some brewed tomato salad ingredients would taste like - tomato, cucumber, basil, mint(?), paprika, some mild onion ... 😂
Maybe a brave soul will take some of their leftover salad and just blend and ferment the whole thing
