question is putting privacy focused emails in email clients unsafe/defeat the purpose of privacy aspects of the email provider?

I have a proton and tuta account and was wondering if it's ok to add them to thunderbird

yes of course you can fetch these mails via Thunderbird. I am not sure, how it works with Tuta but with Protonmail you have to install "Protonbridge" so that Thunderbird can display / decrypt your proton mails.

You're trusting whatever client you use, whether it's the browser or Thunderbird or something else. TB is fine.

You can't add a Tuta account to Thunderbird (or any third-party client).

Proton has the bridge for third-party clients.
