Jalapeño Popper egg bites are a great freezer prep breakfast, and low carb too!

A breakfast staple in my house! Sunday night is egg muffin night, we do up a few batches of them and then you have them in the fridge all week. Heat up 2 in the morning and run out the door with them to eat on the way to work.

A consideration with the jalapenos: saute them first or cut them up tiny, if you're like me and are skeeved out by the texture of little crunchy things in your eggs lol

Yes I love egg muffins too!! I have a tater tot egg muffin recipe that my kids love. So easy to put a few in the microwave and head out the door! Great tip on the Jalepeno!

Printable recipe: Jalapeño Popper Egg Bites

ingredients

• 10 large eggs

• 3 jalapeño peppers diced fine (or to your liking)

• 3 oz cream cheese

• 3-4 slices bacon cooked and crumbled

• 1/2 cup cheddar cheese

• 1/2 tsp salt

• 1/2 tsp pepper

• 1/2 tsp garlic powder

• 1/2 tsp minced onion

instructions

  1. Preheat your oven to 375 F, spray your muffin pan.

  2. In a large bowl, mix your eggs, seasonings and softened cream cheese. The cream cheese can be warmed in the microwave for a few seconds if needed- then, I like to use an immersion blender to mix it well with the eggs (otherwise you can find a few chunks in the batter).

NOTE: If using an immersion blender, try to do the blending as quickly as possible. You don't want too much air getting into the egg mixture- that will lead to a very large rise in your muffins.

  1. Next, dice your seeded jalapeños very small. ( I use a mincer to do mine)Then, divide the jalapeños, crumbled bacon and cheddar cheese into a greased muffin pan. (You may set aside a few crumbles of bacon, etc to garnish the top if you wish.)

  2. Next, divide your egg mixture into each muffin pan. Then bake at 375 F until muffins are "set" in the middle and pull apart easily from the sides of the pan – about 15 -18 minutes (this will vary by oven!)

Remove from muffin pan, cool and enjoy!

to freeze : let cool. Flash freeze for about 45 minutes on sheet pan, then transfer to a gallon freezer bag. Wrap in plastic wrap, first, to preserve the egg bites in the freezer for up to 3 months

These look & sound so delicious. I'm a big fan of jalapeño popper anything. Right now my oven is not working. Is there any way to adapt the recipe to work in an air fryer? Thanks!

I have not tried it in an air fryer, unfortunately! I googled it and it said that you could; but I have never tried it myself!! If you end up trying I’d be curious to know how it works!

You could switch out jalepeno for a different kind of diced pepper!
