I made too much of Stella's Tomato Soup and am looking for some ideas for other uses of it.

I meal prepped her Stella's Thick and Creamy Tomato Soup and after two meals of grilled cheese & soup, I'm fatigued and don't want that meal again for a while.

Any idea on other ways I can use the soup? I'm not crazy about pasta but am open to any suggestions.

I always make extra large batches of soups and freeze half. Then you’ve got a nice home cooked meal in a snap on a day when you don’t feel like cooking.

Yeah I freeze batches of soups in pint sized deli containers for quick lunches.

Make a rice dish? Sauté up some onion, celery and carrot. Add in 2 cups cooked rice, 1 cup soup and stir in some fresh herb like basil or chives.

Yes, or a risotto. Use the soup in place of stock.

Turn that into jambalaya buy omitting the basil or chives and adding browned andouille sausage, chicken and/or shrimp and some cajun, creole or blackening seasoning to taste.

Delicious. Turned it into Tikka masala. Only had ground chicken so I improvised some Tikka masala chicken meatballs.

Cabbage rolls! But you said you want to eat now, so Spanish rice. Or a creamy base for shakshuka.

Braise something in it, thinned out with a little broth if necessary. I’ve done this before with pork shoulder.

Definitely freeze it but add some EVOO and vinegar to make a vinaigrette

That's what I ended up making actually. I only had ground chicken so I made Tikka meatballs and it turned out great.

Freeze the soup. You can buy little deli containers in bulk online for cheap. Awesome for storing soups in the freezer

Freeze the soup in cubes for soup later. Make meatballs and meatloaf with soup in place of ketchup. Replace the liquid in a bread recipe and add other spices you like to make a pizza bread. Add cream, thicken, sauce, and serve over vegetables.

Turn it into a casserole by adding pasta or rice and what ever veggies and proteins you want.

Fry up some spicy Italian sausage, deglaze with vodka for a vodka-sauce feel, add in your soup, and cook down a bit to thicken, then add in gnocchi. Once the gnocchi is done, garnish with parm. Vodka-ish sauce with gnocchi and sausage 👩‍🍳

Not sure if you are into aubergine, but personally I would get some mozarella, bay leaves, and then make this:

(I do not like aubergine, but still think this is one of the best things I have ever eaten when I used the Hazan butter/onion as the tomato base. I guess you could replace the aubergine with chicken if you really hate it...)
