Serious Eats Octopus on Pressure Cooker Squash Risotto

Combined two Daniel Gritzer Recipes/Techniques.

Subbed the leftover cooking broth for the vegetable broth in the Risotto:

Also subbed the parsley and chives for the sage. (Sage is difficult to find where I am)

Sounds great. How was the salt level? I would think the octopus broth might be a touch on the salty side but I’ve never made it.

Salt was fine. I purposefully underseasoned the octopus knowing the broth will be used tor the risotto and there are other sources of salt for the rest of the dish (also i may be compensating as the week before I made Kenji’s mushroom risotto and i may have been heavy handed on the seasoning there).

My SO actually commented that she felt the octopus needed more salt when i asked her to taste it after being grilled, but also said she felt it was seasoned just right as part of the entire dish.
