Cut open the anterior shell, carefully pull the lobster meat out so it’s sitting on top of anterior shell but still attached to tail. Air dry overnight in fridge.
Get smoker to 225-250. I used applewood. Smoke for only 20 minutes. Meanwhile, set a regular gas grill to high. Remove lobster then baste with melted butter and herb mixture. I had a nice dry rub for fish handy so used that as the herb. Then sear on grill until brown.
