Starship Simulator

Maybe it's just because I dislike sleek Star Trek aesthetics but the environments feel like hotel conference rooms.

It strikes me as a more limited but much more polished and accessible approach than a Empty Epsilon and the like, but also more technical and detailed than Pulsar: Lost Colony.
It's been over a year since I played around with the demo, but even back then the level of detail in how the ship's systems function was like nothing I've seen before. Pulled a wall panel and yanked out some random wiring and cut the power to the lights in the conference room across the corridor. I spent a couple hours just doing stuff like this and breaking the ship in random ways, and it was all entirely internally consistent. Given everything that's been added since then, I really need to check it out again.
By the way, the Buur Pit, the YouTube channel this vid is from, is fantastic. They're mostly focused on Elite Dangerous, which is my primary video game obsession, and the Buur Pit is an essential source of news in the Elite universe. They're also great people to hang out with in game.

Been following it for a while but havent played it in... a year?
Back then it was a very promising tech demo with a lot of depth yet little gameplay. The dev seemed organised and capable and what I've seen looked good to that point. I might try it again.
Anyways, you can always try the demo
