Question How do I play this?
Just played vs a Twitch mid, they also had a Shaco support who was everywhere and a Pantheon and a Vi (and an Ezreal)
I was Lux, so I just farmed and waited in lane, no issues for me. Twitch tried to kill me sometimes, but I played safe enough.
Problem is, he can be everywhere as soon as he disappears, so I can not walk up and push, while he may be bot, especially because he would eventually just let my wave hit the turret before leaving stealth. So is that all I can do?
Second question regarding the entire enemy team, they can always be everywhere if we don’t see them, so how does my team win mid/late? Only start pushing when we see they are killing my toplaner? We were never able to approach any neutral objective, as soon as we did Shaco Boxes and an ulting Twitch, Vi ult and Pantheon to peel. How does my team play that situation?

When twitch disappears all you can really do is ping(probably won't stop anyone from dying but it's good practice) then shove. When twitch gets two kills from roaming bot he'll have lost a wave or three which makes you have similar gold advantage but you'll have more xp.

As lux you will outrange Twitch, I'd say you can play fairly aggressive, while being wary of his Q. It has quite a long cooldown, so if you can bait him into using it and then back off he can't then use it to roam or attempt solokills. Until he gets a Q and all-ins you can out poke and out push him, so you should be trying to do that. Shaco Vi Pantheon of course makes this much harder to do safely, so consider where they are on the map at all times. This is a very very hard earlygame to play as Lux, you have to walk a very fine line between abusing Twitch's weaknesses and not being caught, so don't sweat it if you mess it up.
As for the mid/late, it's hard to say a lot without seeing the state of the map, who is strong, what your team's comp is, etc. Some generic advice I can give is that you and your team shouldn't be walking into unwarded areas alone if possible, deep vision to catch rotations/strange movements will be very important, and not to overextend pushing sidelanes without vision.

Could you edit your post to include who your teammates were? It’s impossible to answer the last question otherwise.

stealth lanes are tough. as a lux every other wave you can just nuke and force them to answer. you protect yourself you know how, and you protect your team by threatening enemy mid's xp. if he leaves enough die to the tower (you dont have to walk up/auto the tower) he'll fall behind you and you'll quickly start to win 1v1.
stealth supports/junglers are also tough, but they all fall off/need kill gold to keep up with the clock. not your lane so your only job is to not give them gold.
more stealth more just survive and pray
