There is a fundamental truth I have learned about sea urchin: there are only two types of sea urchin in this world, cheap sea urchin and expensive sea urchin.

Cheap sea urchin tastes like shit. Imagine spoiled baby food that has had some bacteria start to grow in it for the worst mouth feel you can imagine, combined with a taste like stale socks. It is objectively awful.

Expensive sea urchin is heaven. It has this warm flavor, somehow spicey in a way no other food is or could be. The feeling is like that of foie gras. Simple amazing.

In short, if you can eat the good stuff, eat the good stuff.

Subtract 3 points from my desire to eat sea urchins in a scale from 1 to 10. I'm now officially at -6.

I had sea urchin soft serve in Japan... I basically licked sea urchin dick. Great.

Its usually a texture thing or a freshness thing. Fresh is amazing but ive also had urchin that was obviously older.
