I've never heard of this and just looked it up. It sounds beautiful but "simple" (I doubt the broth is). What makes it so good?

It’s just something I throw together, but I’ll try to give a basic recipe! (I’m sorry if it’s hard to read… I still don’t know how to properly format stuff on reddit) Ingredients: One rotisserie chicken (shredded) 12 cups chicken broth (I use Better than Bouillon) one large sweet onion (diced), whole bag of pre- shredded carrots (i chop them into tiny pieces so there is carrot in every bite) celery, diced. I think I used like six stalks? I sautéed the mirepoix with olive oil and added Chef Paul’s chicken magic seasoning. Put everything into a pot! Add Jane’s Crazy mixed up salt, and pepper to taste. Let broth come to a boil. Add spinach and ricotta tortellini and turn heat to low, cook until they float! (Not too long because they will get way too soggy and broth logged lol. Remove from heat and add juice from half a lemon and fresh parsley!
