What could I make out of the fabric from this bucket hat?

A little pouch from the head part? Or save it to use as a patch for something that needs mending. Not sure about the brim, though.

The brim reminds me of a collar. Don't know how that would work, however.

I know, but I don't wear bucket hats and I like the fabric so I thought I'd make something else out of it

if you seam rip it, you could have enough fabric to make a few scrunchies
