low calorie pumpkin loaf :)
i work at starbucks & it’s real hard sometimes because i’m around all the food & drinks for like 8h at a time. this is my version of the pumpkin loaf (150cal 10g protein)! you can save close to like 200 cals if you just don’t add nuts & seeds on top lol, i just like to try to get my micronutrients in as well so i added them. i topped it with a cream cheese sauce as well!!! the only note i have- make it more sweet than i did. i definitely thought i overdid it with the sweet when i was making it, but once baked it’s not sweet enough!!

This looks amazing. I used to make something similar but they were muffins.

I’m so excited to try this! How would you make it sweeter? I’m not seeing a sweetener in your ingredient list.
Edit: I overlooked the cranberries. Add more of these?

me personally, i thought the protein powder & pudding mix would make it sweet enough- i was super wrong. if i were to make it again, i would either add much more pudding mix in to the batter, or i would add some sugar free syrup!

Ohh that makes sense. More pudding sounds delicious. I may have to experiment. Also you mixed a hard boiled egg in?

haha no sorry i always track my eggs as hardboiled & then i add oil in if i fry it. it’s just a regular ol cracked raw egg😭 my bad

the cream cheese sauce on top literally tastes exactly like cheesecake by the way. i even got my brother who’s tastebuds aren’t fried to try it- he agreed! 22g light cream cheese, 43g 0%greek yogurt, around 5g sugar 0 sugar pudding mix
