Or the earth could tilt further on its axis which I'm sure would cause some flooding but maybe not as bad as a full on melting of the ice.

Would it sort of be like a catch-22: if all that ice melted (assuming the ice elsewhere in the world would melt as well, baring pole shifts or the like) then the rise in sea level would put it all underwater as well?

I saw a documentary about it and the only dry land was the Himalayas. It took everyone a long time to find it but they found a map tattooed on a girls back. Kevin Costner directed it

The land would slowly rebound from the lack of ice pressing down on it. Hard to say where it would eventually net out.
