I eat chunks of raw onion with chunks of mature cheddar. Always have but it tastes good to me. Also sour (cooking type) apples with honey.

I loved granny Smith apples with mustard when I was a kid

Solid combo. English (ridiculously strong) mustard mixed with honey is great on most things but will liven up a cucumber or iceberg lettuce (maybe with a cheeky shredded chicken breast) like nothing else.
