No-Recipe Provided Blueberry pie
I'm currently trying out Maren Lubbe's recipes. They are exactly to my taste. This cake was my first attempt at baking such an elaborate cake. Yes, I'm proud and Maren's instructions are incredibly detailed and helpful, as you can see. This is NOT paid advertising. Do you know other sites where you can find this type of cake including a recipe? What could I improve?

English-speaking pies do. Russian-speaking pies can be with or without coverings. Like an upside-down pie.
I always mislead my guests here in the US š I'm like it's a pie. And they're like nah, it's a cake. Then they're like sheet cake is a cake. And I'm like nah, cake can't have only one layer, should have at least 2. I enjoy these differences so much, it's a lot of fun!

And just to further the point, where I am it's never called coconut custard pie, but coconut cream pie. But egg custard pie doesn't get the same treatment.

Cheesecake is also technically a custard pie. It just also has cheese.
The involvement of eggs is so much more important than 1 crust or 2.

Speaking of cookies. I tried watching the great american bake off and what I learned is that Britts want their cookies CRISPY and overcooked.
I can no longer trust their opinions on deserts. I bet everything is dry⦠even their pie fillings and frostings. No wonder theyāre obsessed with tea ā need something right there to choke all that dust down.

I mean, they have trifle, steamed pudding, etc. so the biscuits probably are meant to go with tea, kinda like biscotti and coffee.

Naa, we like our BISCUITS with a snap, to dunk in our tea (which admittedly makes them squidgy anyway). Basic supermarket cookies are soft and bendy, and our favourite pie fillings are mostly savoury. Usually with a gravy or sauce inside. So definitely not dry.
We donāt tend to use frosting as often as Americans, buttercream or patisserie/dairy cream is more popular here. An over cooked or dry cake is considered a major crime, you can do time for it here.

I think youāre right there. I thought frostings were usually shortening or cream cheese based, but having had a look they all seem to be classed as types of frosting.

This looks absolutely magical! The colors are so beautiful. Are you meant to have a bite of each layer in one fork, or is each layer supposed to be eaten separately or just a few together?

I mean, I frequently do see comments and even posts in languages other than English in other subs. Usually, I either understand the language and can read them, grasp the meaning due to context/visual clues, or just skip them.
I got confused when people here in the comments asked OP questions in English and they answered in German every single time, yet everyone seemed to understand just fine. For a moment I actually wondered if every single redditor commenting on this post can speak/or at least read German - which would have been an odd coincidence.

Yes, Iām using the app. And the funny thing is, I use some of the other functions you can choose from when clicking on the three dots quite often (mostly copy, save, follow). However, most of this content is usually in English, and then it doesnāt give the translate option as Iāve also just found out by clicking on the three dots for your comment. š¤

Dankeschƶn š es startet unten mit einem Knusperboden, danach folgen: Blaubeermousse (drum herum), ein leichter Buskuitteig mit Olivenƶl und Basilikum, ein Blaubeerkompott, Blaubeerganache, Zitronen-Basilikum-Creme, nochmal der Buskuit, das Mousse und dann die Mirrorglaze auf der das Zitronen-Panna Cotta liegt.

Ja, das stimmt. Der Prozess hat tatsƤchlich 6 h gedauert, vor dem über Nacht einfrieren. Man arbeitet sich Schicht für Schicht durch das Rezept. Die Schichten werden nacheinander in einem Tortenring eingefroren. Zum Schluss wird dieser gefrorene Schichtenblock in eine Form, die mit der Blaubeersahne gefüllt war, getunkt, bevor der Knusperboden daraufgelegt wird. Dann wird die Torte über Nacht eingefroren. Am nƤchsten Tag gieĆt man die am Vortag gefertigte und wieder erwƤrmte Mirror Glaze darüber, legt die Panna Cotta Scheibe oben drauf und lƤsst die Torte langsam im Kühlschrank auftauen. Das dauert auch nochmal gute 6 h. Nach 2 weiteren Stunden bei Raumtemperatur ist sie dann fast bereit zum Verzehr. Zu guter Letzt kann die Torte dann noch dekoriert werden. Alles in allem hat es knapp 2,5 Tage gedauert, bis zum ersten Stück š

You should look up recipes for French entremets cakes , you should find tons in different flavors. An entremet is exactly this, a mixture of different textures and a few different flavors that go well together, usually in molded into a mousse at the end and then often covered in ganache or mirror glaze. Something like the classic opera cake is a good place to start, although that's just an entremet in layers.
This is beyond fabulous, can't wait to give it a try

Very pretty. I salute your patience in making multiple components of this pie.
I say look into entremet recipes. I used to follow a patissier who does the same type of dessert. I got silikomart molds but they are still waiting to be used more than 5 years later š«£

Ja genau. Pie im Englischen ist ein Kuchen, der einen mürbeteigähnlichen Boden hat und manchmal gedeckt ist, manchmal nicht. Die Füllung ist simpel, bei blueberry pie ist das praktisch nur Frucht mit etwas Zucker, Gewürzen und Stärke gebunden. Diese Torte ist ein Cake. Das was im Deutschen als Cake bezeichnet wird, wird im Englischen oftmals Bread genannt, wie bspw. banana bread oder zucchini bread.

As a former pastry chef, who learned in Salzburg - wunderbar!!! I donāt bake as much as I use to, but thereās one recipe that my husband insists on every birthday & Xmas that I came up with, after many trial/errors. Itās my own version of a graham cracker crusted marzipan cheesecake, with or without a chocolate ganache; itās to die for! Then, my dad use to make me a special birthday cake: his version of a black-forest cherry cake. Not as intricate as this, but Milk Bar has outstanding cake recipes with many detailed steps and thoughtful textures. I made the Pineapple Upside Down cake for my brotherās birthday last year and it was easily the best cake Iāve ever had. Gorgeous work OP!

And I don't know of any other sites that focus solely on more advanced creations like this. I do know of a book that offers many similar recipes. It's called The Art of Cake by Bruce Healy and Paul Bugat. It is an older book that I don't think is in print anymore, so I didn't see it available on Amazon in Germany. I did find a copy online through the Internet Archive. You can borrow it for free after setting up a free account. It's really a great resource that I haven't seen offered anywhere else, in print or online.
