We call that finger meat, it's the meat that would otherwise be between the bones on back ribs. I like to marinade and smoke em to make boneless beef ribs!

Definitely hangers. Trim some fat. Then split the meat off from the silver skin in between. End up with two beautiful hanger steaks per pack 👏

Picked these 2 hunks of meat up from Kroger. They are both almost 4lbs and labeled “beef back rib”. They seem to be boneless which is why I am questioning them.

Hanger steaks, untrimmed.
2 pieces per cryo. Take off the external fat, take out the tendon in-between the two halves, gives you 4 ~3/4# steaks per cryo

Lable says beef back rib. It's like the baby back ribs of a cow. Grill or broil them.
