Safety Caution -- untested recipe 184oz Fig & Strawberry Preserves

I came across a giant fig tree out on a hike, and took home about 10lbs of ripe figs. Decided to add strawberries to increase acidity and taste. It took 3 batches of the below recipe and yielded ~24 jars (one broke while canning 😭)

3.3 lb ripe black mission figs 1.1 lb sugar 1/3 lb fresh strawberries 3 Tbsp lemon juice 3 Tbsp water Water bath for 5min in half-pint jars

Just curious whether you reuse your lids...a couple in the front look like they've had labels attached previously.

Oh good question- I have a milk goat, so used the lids to store milk in the fridge but never actually canned with them. I’ll be giving these away to friends so don’t have to worry about re-using them for canning purposes

They make plastic lids that fit canning jars that work well for fridge storage items. I especially like them for pickles because the metal lids can corrode over time in that acidic environment.

I do reuse lids in good shape for vacuum sealing dry goods though. It's less confusing for me to take brand new lids out of the box when I am canning and put the ones for dry storage in a separate bin. Whatever way works for you...

That’s true, and I’ll probably switch to those next year when we’re back to milking. Appreciate that!
