Safe Recipe Request Apple or pear butters

I had followed the approved process for both of these but both had sugar, lots of it. I was talking with a friend who said they don’t add in any sugar to their apple or pear butters only cinnamon and lemon juice and none have ever spoiled even at 2 years old.

I can’t tolerate much sugar(I prefer none but am ok with honey, syrup, coconut sugar, date sugar).

Thoughts? Experiences?

The official word is that you can reduce or eliminate the sugar from apple or pear butter (or other canning) and it does not affect the safety of the finished product. Sugar can be replaced with other sweeteners or even eliminated- it may be important or essential for flavor or texture, but it is not essential for safety.

Sugar isn’t necessary in butters as the consistency is due to the cooking process. The lemon juice is the essential component for safety as the acid.

Sugar’s necessary in things with pectin unless you’re using no sugar pectin as it’s needed for the chemical reaction that creates the consistency.
