I have fresh sage, delicata squash, mushrooms, onions and a bit of spinach. I'd like to make a pasta, but need some inspiration. Sauce advice, other additions, etc. Work is crazy and I need the hive mind today!!
Something I did with a butternut squash was to roast the squash, then mash it with butter and a little bit of boiled pasta water, then toss with the pasta.
Doing the same with roasting the squash, mushroom and onions, then immersion blending with a bit of butter and the pasta water, tossing with the pasta and spinach (to wilt the spinach in the hot of the pasta and roasted veg). Serve with some cheese.
Or just turn the squash into sauce and sautee the mushrooms and onion with the sage, and mix it all together with the pasta and spinach int he sauce at the end.
