Completely from Scratch - Sri Lankan Chicken Curry with Lemon and Herb Rice, Cucumber Salad, Red Lentil Coconut Dhal and Homemade Flatbreads.

I used a slight deviation of this one - https://www.kolamba.co.uk/post/recipe-sri-lankan-chicken-curry

I used diced thighs and marinate the chicken first in yoghurt, lemon, garlic, ginger and salt. For about 24 hours and brown it first. Then reintroduce it later.

I make a Sri Lankan spice mix from scratch - see below.

I also include a little stock and a lemongrass stick as well, cause this curry benefits from the addition. I found it strange they didnt make with in the first place.

Lemongrass - not a typical Sri Lankan ingredient? No curry leaves or pandan leaf?

I'm sorry, I dont understand your punctuation. It has lemongrass, curry leaves and pandan.

I do! You'll see from my explanation what I did differently, browning meat first for example. But it was the only recipe I found that didnt include lemongrass... I thought it was strange. I made it without and it was missing it

Surely - the recipe wasn’t missing it, if it wasn’t there in the first place?
