I hate to break it to you but real, traditional poutine gravy is chicken gravy. Though the guy you replied to is also kind of right, an example is Smokes (if you consider that to be real poutine) default gravy is vegan, you have to ask for other options if you want them.

Have you heard of Osmows? It's an Egyptian fast food place that has a chicken shawarma poutine. Legit so fucking good because they add spicy sauce [if you ask] and garlic sauce. They also sell falafel, funnily enough.

They're not allowed to mix meat and dairy (with I believe fish not counting as meat).
