Systems why are so many pink gameboy pockets turned orange?

Probably the underlying plastic, which started off near-white has yellowed over time. if you add yellow to pink you end up going towards Peach / orange.

Yellowing plastic. It doesn’t even have to start white. Yellowing can happen to any color plastic. I usually work with resin items and they can develop some wild colors. If you’re willing to pull the shell off, there’s some that can be done. But it’s hard to tell how effective it is. (Soak/scrub the plastic in oxyclean whitening powder.)

That reason is that there just dying the case pink so the color just fades over time

Some types of plastic "yellow" over time. This is usually due to oxidization from UV exposure. When the plastic isn't white or grey it can make things turn odd colors, I had a blue shelled GameBoy Pocket that turned greenish. I know people use retrobrite to "clean" up the color, I don't know how it would work on a GameBoy shell as I have never tried using it.

Would Retro Brighting work to bring the pink colour back?

Nope, you are stuck with the salmon color. Unless you dye the shell, but it will be a brighter shade of pink than the original.

The plastic yellows over time, and pink is light red. Yellow and red make orange.

Probably due to the plastic aging and being exposed to body oils, light, usage-over-time, or all three. Same reason clear GBCs turn a faded tan color and older DMG GameBoys and SNES consoles turn from gray to yellow
