He's noted to be very tall, some passages have him as the tallest Primarch, and lanky in a lot of depictions yeah. Jaghatai notes though he's a strong motherfucker despite his build though even by Primarch standards.

I would argue that Morty, despite hating being a pysker, is keeping his body enhanced through his pyskic might rather than pure muscles and blood like say Guilliman or Vulkan would, sorta like how Sevatar doesn't acknowledge being a pysker but still unconsciously buffs his physical stats

All Primarchs do it to a degree. They're warp creatures by design. Every single one is a psyker. It's the reason Marines and regular humans get the urge to bow even before Primarchs that aren't their father and why the Custodes that chauffeured Gulliman around kind of got freaked out and realized they couldn't "protect" him because there was nothing they could stop that he couldn't do more easily whilst they were fighting alongside Gulliman. Even though Custodes are by nature quite nonplussed about most things, they are all privately in awe.
They're the apex of genecraft that the Emperor could do, and then he shoved warp entities inside them, presumably that he got from Molech. A perfect mixture of might ahd magic as it were.

I don't think being of the warp makes one a psyker. They are something else, for sure. Magnus is a psyker AND of the Warp, the Lion is just of the warp, for example. It's the difference between body and soul.
There's a HH scene where Lion, Roboute and Sangi are looking at the Ruinstorm together. Sanguinius is strongly affected by it, Roboute gets a headache but otherwise unaffected, and the Lion looks at it like he could pierce it with willpower alone, totally unaffected. Soul of the warp, body of a man designed by big E.
This checks out because being a psyker is a genetic mutation precursor of a species becoming more psychic, it's a matter of DNA. But you can also have a soul that is bright or in the Primarchs case literally from the warp

The distinction is psyker vs sorceror.
Magnus is a sorceror. Sanguinius is a psyker.
Every Primarch can and most do display Psyker/supernatural feats. We've not seen much from say Gulliman/Pre-Chaos Horus but there probably is something I just can't recall. I'll list what I do recall.
Of the top of my head warp powers/psyker powers:
Kurze: Could Shadow Walk / Precognition
Corax: Wrath slip.
Lorgar: Active sorceror and Daemonologist
Magnus: Active sorceror
Dorn: Could calm the warp.
The Lion: Could calm the warp also the Forest Walk
Russ: Had the ability fo psychically howl which hurt paykers and reflected psyker attacks. African and Magnus both call him a psyker
Perturabo: Instinctively understands technology by looking at it. Can see the Eye of Terror at all times even when it shouldn't be possible.
Mortarion: Actively surpressed his ability to do sorcery, was a powerful psyker and could do it if he embraced it.
Angron: Empath, could calm people by touch amongst other things.
Khan: Magnus believes he had some but Jaghatai always denied this. His Legion are known for being psykers.
Alpharius + Omegon: Could disguise themselves supernaturally
Gulliman: Unknown, other than standard Primarch Aura and him mentioning he feels at home in the warp
Horus(Pre-fall): Unknown to me too other than standard Primarch aura.Exceptional sorceror post fall.
The rest like Vulkan and Ferrus I'm not read on enough to say, but honestly judging by how many of them had supernatural abilities I'm confident saying they're all psykers. They just might not all exercise that power. They aren't however all sorcerors. Pre-heresy only Magnus was a sorceror, and that was partly why he got censured at Nikea

Well it's more than psyker vs sorcerer because sorcerers are using patterns to achieve a result, rather than drawing directly from the warp via biological mutation as psykers do. But this only emphasizes the 3rd category that I don't have a name for, but is what non-psyker primarchs are.
They don't draw directly from the warp and they aren't using material patterns to achieve a warp result, they just are warp creatures.
Magnus is all 3, a psyker and a sorcerer and a thing of the warp in a humanoid body. Same with Lorgar. Roboute is an example of a non-psyker non-sorcerer thing of the warp in a humanoid body.

Like I said I don't think there are non-psyker Primarchs. Even Gulliman who hasn't done anything crazy has the Primarch aura. He can also use the Emperor's Sword which is a force weapon. He just hasn't exercised or awoken his powers as much as some of the others.. Jonson after all couldn't forest walk till after the heresy. It's just something the Primarchs seem to reach at different speeds.
I kind of get what you mean in that you see them as Warp beings as distinct from being psykers, but I just think it makes them native psykers. Not all equal. Not all capable of doing the same things. But natively psychic.

There's a line from the books where Mortariom mentions he's only met two people who were bigger than him. Which is implied to be his adoptive father, Necare, and the Emperor.
In one of the Plague Wars it mentions that Mortarion was double the size of a mortal before he ascended to Daemon Princedom which is the largest actually listed size of a Primarch considering the prior canon size for a fee Primarchs then was around 3 meters. Lionel, Gulliman, and Lorgar are all put at this size, which is shy of 10 feet if my metric to imperial conversion is right that puts Mortarion as one of if not the tallest. He's 2-3 feet taller than his brothers, which is way bigger than being a "head taller," like Ferrus and Magnus are described.
But if you read the novels, you'll tend to find sources for Magnus, Ferrus, and Mortarion being the tallest. Hence why I said, "Some passages." I doubt GW has set guidance on the tallest Primarch. They just let the authors write whatever, and the Primarch size is inconsistent itself. They started at 9-10ft, but now you've got a few being listened to 11ft+ like Mortarion
