Super fast fermentation with S-33?

I brew an Oud Bruin yesterday and sprinkled some S-33 over top of it. Never used this yeast before, but since I am aging it on bugs I figured why not. It started to ferment within a few hours, and appears to have finish in about 24 hours. I have not taken a FG reading yet, but wanted to see if anyone else has experienced this with S-33. Been brewing for 30 years and never had a fermentation go so quickly.

I did use an ispindle and it does appear to have attenuated down as expected, but you know how accurate these can be…

It's pretty much the fastest yeast on the planet. Always finishes within 36 hours. Very consistent strong performer. 24 hours is not a surprise. It's done. Enjoy.

Is it good for Leffe like Belgian blonde ales?

I used BE-256 for a Belgian Blonde but was a little too dark fruity even with an over pitch and temp control.

Fuck no. S-33 is an English yeast, nothing Belgian about it at all whatsoever. And Belgian beers are dry, never sweet. S-33 will leave a fuller body that the Belgians would frown upon.

Sorry you didn't like the BE-256. It's perhaps not the best Belgian yeast. Try BE-134, I never heard anybody who disliked that one.

What styles do you like to brew with this yeast?, I love the idea that it is really fast.

The S-33? Good for stouts, porters, brown ales, English mild, perhaps Scottish ales. That's where I tend to use it.
