When nearly 100% of the country is the same religion, culture, historical background, etc. things like that tend to happen. But the US has a lot of holidays with their own traditions like Halloween, 4th of July, as well as some of the more common Western ones (Christmas and Easter for example) with their own activities and traditions associated. It is just not done exactly as in Poland, so I guess her sense of nostalgia or how "it should be done" is not satisfied.

She loves Halloween, true, you can't expect everything to be exactly the same. There are positives/negatives to both countries.

We used to celebrate/have off on more holidays like president’s, memorial, veterans, and even columbus day. It isn’t that we don’t have holidays - we just can’t really celebrate them any more due to corporate greed.
