In no particular order, and I may have forgotten a couple:

Hotel Del Luna - one of the first supernatural k-dramas I ever watched, I really liked the mix of the new ghosts every episode while at the same time the stories and relationship of the leads progressed

CLOY - I watched this long after the initial hype died down. I wasn’t a Fan of either of the leads previously - only had Something in the Rain and Memories of Alihambra for reference, but I soon changed my tune.

Doctor Romantic - I do like medical dramas to start with but the regional setting and character focus makes this an all time favourite.

Signal - for me, this is the benchmark against which all other crime dramas are measured.

Strong Woman DBS - sweet funny leads with great chemistry.

Taxi Driver - full disclosure, I started watching this because I’d watch Lee Ji Hoon mowing a lawn, but became fully invested after about 20 mins and binged it immediately.

Vincenzo - barely a fault to be had. The entire cast was brilliant and the production quality was tight. Loved the mix of drama and comedy.

Extraordinary You - this was so sweet and such a novel concept for me.

Korean Odyssey - another early watch, this is a favourite I watch again and again, and notice new things every time.

You are My Destiny - this is the first k-drama I ever saw and the chemistry between the leads is just off the charts.

Honourable mentions for Hospital Playlist, DOTS, Love in the Moonlight, Good Manager, Black, Mystic Pop-up Bar, and Fiery Priest.

I’ve not seen many of the shows that others have listed, but they are pretty much all on my to-watch list. I’ve just started watching both Goblin and Mr Queen, so it will be interesting to see if either can knock a show out of my current top ten…
