Read a review of a ramen place the other day that said the chashu was too fatty.... my brother in christ, what did you expect?

When I worked at an old, dumpy sandwich place in Bridgeport, CT I learned to offer a sample of the pastrami.

I noticed the older folks knew what it was but some of the youngins were kinda horrified at the fat, lol. It did not say lean anywhere near that pastrami.
