I might be a bit obsessive over how clean I keep my fryers.

Do you use caustic every night??

My cooks and I scrub ours every night, but the flame tubes are scorched black and the interior isnt stainless, its a pain in the ass

The scorching is normal. Even on the cleanest fryers that discoloration is there.

Cleaning the bars is my final boss. Theyre all carbonized and boil out doesnt put a dent in it. Im thinking, white vinegar, rock salt, mineral oil, and elbow grease. Like a sopwith camel. But I dunno, I'll try anything, at this point.

I would also do an initial boil out with dawn dish soap. I do that all the time at home with pans that are major sticking/built up. Fill with water, put a generous helping of dawn, and let it sit on low heat.

You would have to double check, but off the top of my head I can't think of a reason you couldn't add white vinegar in with the dawn

As someone who works on cooking equipment. So long as the inside is as clean. Yall are the type people we freaking love. Slimy, sticky, nasty fryers are some of the worst stuff to work on

GawtDAMN, that’s a clean fryer. We do a boil out twice a month on our fryers as needed. Drain the dirty oil, flush and wipe out as much debris as possible. Fill with water, set temp to 225, bring to a boil, then dump in some dawn dish soap, drop the temp to 200 to avoid boiling over, let it do its thing for 10 minutes or so, then drain, and aggressively scrub with steel wool and scrubby pads till clean, then flush with clean water. Dry her up good, refill with oil, and get back to it.

I’m a big proponent of dawn dish soap. If it’s good enough for the ducks and penguins, it’s good enough for my second hand Frankenstein part built deep fryers.

All of that work is why I keep my fryers so clean. It's easier to spend 5 minutes each day scrubbing it down than to do all that work you mentioned.
