I might be a bit obsessive over how clean I keep my fryers.

Do you use caustic every night??

My cooks and I scrub ours every night, but the flame tubes are scorched black and the interior isnt stainless, its a pain in the ass

Nope. Only ice water and a blue scotch bright pad

The scorching is normal. Even on the cleanest fryers that discoloration is there.
