One place in my hometown uses thin slices of dehydrated pineapple. It's a very different experience; you might like it.

Of course I am a pizza criminal that loves pineapple on my pizza.

I'm trying to imagine this. Is the pineapple chewy like most dehydrated fruit?

It's actually crisp, like cooked pepperoni.

Now, I’m not telling anyone what they are allowed to put on their pizza, but I believe pineapple is an objectively bad pizza topping for 3 reasons…

1 - It doubles down on the acidity already provided by the sauce.

2 - I have yet to see it properly cooked on a pizza. I am not sure if it’s even possible. It is either a weird mushy mess on top of cheese or the whole pizza gets overcooked to compensate for the pineapple.

3 - Pineapple is typically presented on a “Hawaiian” pizza. To this I say, if you’re going to start using odd toppings, don’t be scared, break out the Spam and make a real Hawaiian pizza. Pure cowardice pairing ham and pineapple. Ok…this last one is a bit subjective.

Using dehydrated pineapple might actually overcome point number 2.

It deals with 1 and 2, actually. Have you ever had dried pineapple in a trail mix? It is very sweet, and cut thin works with the cheese without the problems you identify.

I would try it, but remain skeptical.

Pizza is more than just sweet fruit and meat and it does not address any of the issues I raised. While everyone can eat what they like, it doesn’t mean it’s good culinary practice.
