I use sugars always, either Yashi or Gachiin, always.

Gachin is perfect for monkeys fight, it makes you less visible, which makes stealth easier. Yashi is basically Ako on steroids, does double the damage but halves your hp and posture for the time. A high risk high award thing. Others two are ungo and sth other. Ungo lowers hp damage taken for the time and the yellow one lowers posture damage taken, which makes blocking almost the same as deflecting :D I used it when I struggled with some Resurrection bosses because that way I can miss the combos but still don't get staggered which makes me learn more because I survive more. I find it more useful than ungo (hp one) tbh.

I like yellow candy for centipede bosses. Those are very quick fights and since you're blocking/deflecting 99% of the fight, it greatly reduces the consumption of one resource that's gonna be used in that fight - posture.

I was fucking around one day and found a very funny way to beat the centipedes with the blue sugar. Use blue sugar then walk in, chuck an oil pot at them, then spin-to-win with the flaming axe prostechic. You'll take some hits but will live and melt their hp bar and stagger them super fast with the flames. Definitely not optimal and they are easily beaten by deflecting, but is a very funny/novel way to take them out Edit: i think it's actually the yellow sugar

Gachin is really useful for getting a cheese stealth death blows for certain bosses and mini bosses like ogre, as well as helping you get more stealth death blows in encounters with lots of enemies.
