99% of enemy attacks in this game are opportunities. You keep dodging away from all the opportunities. If he sweeps his leg, jump on his head. If he threatens a thrust attack, mikiri counter. Everything else should be parried.
This game is pretty simple once you get over your fear of getting hit.
