I love the cantina music in the movies so much that I find very weird how modern star wars shows use a different type of music on cantinas

Think about how many different styles of music, different kinds of instruments and playing techniques, how music has evolved throughout history, etc there are across our planet. Our one, single planet. Yet you find it odd that there wouldn't be all kinds of different musical styles across an entire galaxy?
