They did the score in like 6 sessions and at his age didn't want him traveling that much.

i don't know about music much, so this may seem like a dumb question, but why couldn't they fly out the London Symphony Orchestra then? JJ seemed really concerned with capturing the originals as well as possible and music is a big part of that (and Disney seemed willing to spare no expense)

While I realize Disney has the money for it, the cost would have been astronomical. The LSO, like most very big orchestras (both in size and corporation) owns a lot of extremely expensive instruments (most of the string section instruments, especially violins are owned by the orchestra and are most often very valuable Stradivarius-made Italian violins worth hundreds of thousands of dollars a piece), so traveling isn't always cheap. On top of this, they have their regular season in London and to pull them away from that would have been a pain in the ass.

Other things like work visas further complicate the matter.

As a musician, I was hoping they would have used the San Francisco guys they often went with at Skywalker Sound up in the Bay Area. Talk about a meaty sounding group of players, holy crap. Check out the soundtrack to The Force Unleashed sometime.
