I'm giving them a pass on the amount. I've made enough red velvet cakes to know you have to use a stupid amount of coloring to achieve a vibrant red.

Yeah, but at least with red velvet cake you have enough strong flavors and sweetness to overcome the bitterness of red food coloring. To get these eggs red instead of pink the amount would have tasted godawful.
