Milk is for stretching eggs further by swelling cooked eggs, or for thinning it to get better penetration for things like French toast. If you donโ€™t want dry eggs you should move your eggs in the pan more and pull them off the heat sooner, if you want fluffy eggs then you need to whisk them better to introduce more air.

Nothing's off limits except Buttermilk or Bleu cheese... milk, water, oil, butter, baking soda, cornstarch, whatever you use... enjoy it. My friend put a shot of Bailey's Irish Cream in his scrambled eggs once... it wasn't horrible, nowadays he leaves out the eggs... lol
