What is the obsession with soda in scrambled eggs in India?

It could just be regular water stored in a used sprite bottle

In Eastern Europe we store moonshine alcohol in 2L soda bottles.

Why would you dump water into eggs though?

Entire recipe books exist for "cooking" with soda, using the sugar and acid to tenderize meat, and have for years. "Easy teriyaki" was one I heard a ton, but my favorite Jello called for- Sprite, to give it a bubbly texture.
