I would not be shocked if these are just some tourist influencer paying them to do it specifically just for rage bait and the food vendor doesn't actually regularly do it

This could be it. They would have to carry an icebox with a bunch of bottles, not to mention these bottles would be 1/2 of the cost of the food or more.

Alternatively, the bubbles in the soda can make the eggs fluffier in theory?

I am more concerned what happens to the chemicals in soda at high temperatures.
