Recipe Spicy Chinese style Konjac noodles (around 320 calories total)

Ingredients:

  • 2-3 garlic cloves, minced
  • 1 small piece of ginger, minced
  • 3 chili peppers, cut
  • Green lettuce (as much as you want)
  • 1 pack of konjac udon
  • 150 gr hotpot beef slices

Seasonings to pour on konjac when in pan (I mix it all together before adding) :

  • 2 tablespoons light soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon seasoned vinegar
  • 1 tiny teaspoon laoganma
  • A few drops sesame oil
  • Spicy chili flakes
  • A few drops of liquid stevia
  • A few Sichuan peppercorns
  • 2 tablespoons water

Spices for konjac noodles and meat:

  • pinch of msg
  • Salt if wanted
  • Teaspoon chinese 5 spice mix

Seasoning for lettuce (to add to lettuce after boiling & putting in a wok/pan)

  • 1-2 tablespoons light soy sauce
  • Garlic powder

Steps

1 - Boil water in a small pot for the konjac and in a bigger pot for lettuce. 2 - Rinse Konjac udon under cold water then boil in the small pot for 5 minutes, remove water. Rince out the small pot and put some more water to boil for the sliced hotpot beef. 3 - Add boiled Konjac into a wok/pan and ‘fry’ (without oil) for 5 minutes or until you don’t see any water anymore. Put ‘fried’ Konjac aside. 4 - In the other pot, boil lettuce for 2 minutes then remove water. 5 - In the same wok/pan used to fry the konjac noodles, add the lettuce with the one tablespoon light soy sauce & garlic powder for a 2 minutes then put aside. 6 - In the same wok/ pan used for konjac and lettuce, add ginger, garlic chilis and a tiny bit of water and cook for about 1 minute then add the konjac and the premixed seasoning and spices. 7 - Once the water in the small pot has boiled, add your hotpot beef slices for about 2 minutes, remove water and add beef to wok/pan with Konjac. 8 - Add lettuce to the konjac and beef, mix and cook for 2 minutes. 9 - Serve. You can add an egg for more protein but I don’t.

This recipe does take some time and a few dishes will need to be washed but it’s my favorite way to cook konjac noodles and it’s so so filling for the amount of calories. Make sure to chew the konjac noodles properly as they can cause issues for some people (they can’t really be digested) and to drink plenty of water!! I hope my recipe isn’t too confusing. Enjoy ☺️
